Sunday Sweets #37 Cookies & Cream Cake

I've been waiting for an excuse to bake this cake for a while, it jumped out at me whilst browsing through The Hummingbird Bakery Home Sweet Home cookbook.  It sounded delicious!  I had the perfect reason this weekend, to celebrate the return of one of my besties.  Hey Nic Nac! It didn't disappoint, whilst the icing is a bit on the sweet side for me (I actually used half the recipe amount too) the sponge is delicious.  Lovely and moist with an amazing cookie dough kinda flavour.  It is scrummy!


For the sponge
110g unsalted butter, softened
380g caster sugar
320g plain flour
4tsp baking powder
1tsp salt
320ml buttermilk
3 large eggs
135g fresh supermarket bakery cookies, I used milk chocolate

For the frosting
1kg icing sugar, sifted
320g unsalted butter, softened
500g marscarpone
2 fresh cookies, crumbled


Preheat the oven to 170c  /  fan 150  /  gas 3

Line and grease 3 x 8" cakes tins

Mix the butter, sugar and dry ingredients together until they form a sandy consistency with no large lumps of butter

In a separate jug mix together the buttermilk and eggs

With the mixer/whisk on a medium speed add the liquid to the butter and flour mixture in a slow, steady stream.  Scrape down the sides of the bowl as you go.  Mix until the batter is even and smooth

Crumble the cookies into rough pieces, not too big, and stir them through the batter.  Divide the batter evenly among the prepared cake tins

Bake for 30-35 minutes until golden brown.  Allow the cakes to cool completely before removing from the tins.  

Make the frosting gradually by mixing the icing sugar and butter together on a low speed until combined and there are no large lumps of butter.  Add about one third of the mascarpone and beat until combined and smooth.  Gradually add the remainder and mix until smooth.  Turn the mixer up to high and beat the frosting til light and fluffy.

Once cooled sandwich the layers together and cover in icing.  Decorate the top with the rest of the cookie pieces.

I think this little boy was a bit disappointed to be given grapes whilst we were tucking into cake, hehe.
