Sunday Sweets #24 Cheesecake Brownies

This weeks Sunday Sweets has been made by the fair hands of Gray (not Gary as my iPhone predicted!)  Didn't he do well!  Every Friday someone in Gray's office takes a turn to bring in a home baked creation and this is the result of Grays second attempt.  He made a chocolate cake first time and wanted something equally chocolatey but with a bit of a twist.  The tang of the cheesecake adds a nice contrast to the rich gooey brownie.  The boy did well, they were YUM!

Gray used this brownie recipe and made the cheesecake as follows:


400g Cream Cheese
1 tsp Vanilla Extract
125g Caster Sugar
2 Eggs


Make the brownie batter as per the recipe.  Add all the cheesecake ingredients into a bowl and mix until smooth

Pour the brownie mix into a greased and lined square cake tin saving a few spoonfuls for splodging on top

Add the cream cheese mix to the top of the brownie mix then spoon the remaining mix on top

Swirl the two together with a skewer and place in your preheated oven

Check the cake after 35 minutes, if it wobbles it needs longer

Once cooled put in the fridge to set, this makes it easier to cut up and I think cheesecake always tastes better once chilled

Gray's cheesecake mix was quite runny so mixing the two was really hard, we took it out of the oven after 5 minutes and gave it a quick mix so it was more marbled and less like layers
