Sunday Sweets #20 Caramel Apple Crumble

After baking last weeks sticky toffee pudding I asked my twitter friends what's their favourite pudding and Steph replied Caramel Apple Crumble.  I haven't tried it before and love apple crumble so looked up a recipe and decided to bake it for my Mums birthday celebrations last night.  I read the reviews on this recipe and as I like a good crumble to filling ratio I doubled the crumble quantities.  I also replaced eating apples for cooking apples and personally think it could do with more caramel than the recipe calls for.  I used gluten free flour for the crumble and that was a mistake, I have only ever baked cupcakes with gluten free flour and personally cannot tell the difference but I could with the crumble.  It was a lot more crumbly than normal and could have done with a bit of liquid.  It still tasted bloody good though :)

6 cooking apples, peeled and diced
6 tbsp Carnation Caramel
100g plain flour
100g oats
100g cold butter, diced

Heat oven to 200C / Fan 180C / Gas 6

Put the apples into a saucepan with a splash of water, cover and cook over a high heat for 4-5 minutes, stirring now and then until soft.

Stir in 3 tbsp of the caramel then pour into an ovenproof dish

Dot small spoonfuls of caramel over the apples until only 1tbsp is left

Mix the flour and oats together then rub in the butter with your fingers until you have a crumbly mixture

Stir in the remaining caramel then scatter over the apples

Bake for 18-20 minutes until golden and crisp on top

Serve with custard or ice cream

  2. Oh my god this looks amazing - I'm usually more of a chocolatey/ice cream pudding kinda girl, rather than crumble & custard, but I think this could turn me haha!
