Sunday Sweets #9 Mini Victoria Sponge Cakes

I couldn't resist buying the Lakeland mini sandwich tin how adorable are these mini Victoria sponge cakes?!  Little portions of heaven.  I used the recipe on the Lakeland site, it's been calculated to fill the tins perfectly with no waste and create the right size cakes.

Ingredients
175g unsalted butter, at room temperature
175g caster sugar
3 large eggs
1 tsp vanilla extract
175g self-raising flour
pinch of salt

For the filling
150g unsalted butter at room temperature
300g icing sugar, sifted, plus extra for dusting
1 tsp vanilla extract
raspberry or strawberry jam


Method
  • Grease the mini sandwich tin. Preheat the oven to 180C / Fan 160C / Gas 4
  • Cream the butter and caster sugar together until the mixture is pale and light.  
  • Gradually add the eggs, mixing well between each addition and scraping down the sides of the bowl from time to time.  Add the vanilla extract and mix again.
  • Sift the flour and salt into the bowl and fold until the mixture is glossy and smooth.
  • Divide the mixture between the mini sandwich tin and level with a teaspoon.  Creating a slight well will prevent the cakes from doming although if yours do they can be levelled once baked. 
  • Bake on the middle shelf for about 15 minutes until golden, well risen and a skewer comes out clean. 
  • Leave the cakes to rest in the tin for 2 minutes then carefully ease out onto a wire rack and leave until cold.


  • To make the buttercream, cream together the butter, icing sugar and vanilla extract until the mixture is pale and light.
  • Cut the cakes in half and spread the bottom layer with buttercream.  Top with a spoonful of jam and sandwich with the top cake layer.  Lightly dust with icing sugar to serve. 

Don't they look cute!  I am going to have to restrain myself so I only eat one at a time!

  3. These are so cute! My Mum loves Victoria sponge but would never be able to eat a lot of it at once so these would be perfect for her, I may have to get baking! xo

  4. These look delightful, they're so cute! I've seen a recipe somewhere which uses empty [cleaned out!] sweetcorn tins to make these, but I love the look of that tray. xx

  9. Not usually a fan of victoria sponges cakes, i find them a bit boring compared to more elaborate and time consuming cakes but these are just too cute.
