Sunday Sweets #7 Milk Chocolate Cookies

300g plain flour
215g light brown sugar
170g unsalted butter
120g granulated white sugar
1 large egg
1 large egg yolk
1 tablespoon vanilla extract
1 teaspoon salt
1/2 teaspoon baking powder
300g milk chocolate

  • Melt the butter and leave to cool.  Mix together the butter, vanilla and both sugars.  Add the eggs and beat well.
  • Mix together the flour, baking soda and salt and gradually sift them into the mixture.  
  • Chop the chocolate and stir into the mix.

  • Once your mixture resembles dough cover the bowl and place in the fridge for 30 minutes.  Preheat the oven to 190C / Fan 170C / Gas 5
  • Roll the dough into small balls and place on a baking tray lined with greaseproof paper.  Aim to make 6 cookies per standard size baking tray.

  • Bake in the oven for 10-12 minutes until the edges start to go golden.
  • Allow them to cool completely before removing them from the paper.
