Sunday Sweets #2 - The Perfect Victoria Sponge

This weeks Sunday Sweets is my all time favourite cake, the Victoria Sponge.  In my opinion no other cake can beat it, it's perfect in every way!  The recipe below makes a two layer 8" cake so if you want to make three layers like me you will need to double the ingredients.

225g unsalted butter
225g golden caster sugar
4 large eggs
225g self raising flour
2 level tsp baking powder

  • Grease and line two 8" cake tins.  Preheat the oven to 180C / Fan 160C / Gas 4
  • Cream the butter and sugar until light and fluffy
  • Add the eggs one at a time whisking well after each addition. Add a spoonful of the flour with each egg to prevent the mixture from splitting
  • Sieve the flour and baking powder over the eggy mixture and whisk until combined
  • Divide the mixture between the pans and place in the oven for about 25 minutes or until well risen and the tops of the cakes spring back when pressed lightly
  • Leave to cool in the tins for a few minutes then turn out onto a wire rack to cool
  • When completely cold sandwich the layers together with jam and buttercream
  • Enjoy!!

If you've done the math you'll be wondering what happened to the fourth layer, don't worry it didn't go to waste, I made Gray a couple of slices of cake to enjoy whilst I was with the girls ;) I would never waste cake!

  9. Oh yum! I love a good vicky sponge, I know that the WI say you shouldn't put cream in it but I HAVE to have cream in mine!
